3 Easy AF Salmon Meal Prep Ideas for Busy Season

Meal prep to me should be easy, quick, + tasty. One of my favorite hobbies is cooking + baking delicious, healthy foods. I believe in having a sustainable relationship with food where I eat healthy overall, but listen to my cravings here + there. These are my go-to salmon recipes when meal prepping. I think spicing up your meal preps during the week is key to avoid getting tired of the same foods everyday. Here are the recipes!

Salmon Tacos

What You Need:

  • Salmon

  • Olive oil

  • Whole wheat taco tortillas

  • Mexican style cheese

  • Pinto beans

  • Mango salsa

  • Sour cream

  • Fresh cilantro

  • 1 avocado

  • 1 lime

  • Ground pepper

  • Garlic powder

What to Do:

  1. Sprinkle ground pepper + garlic powder on raw salmon

  2. Bake salmon with olive oil for 20 minutes at 400 degrees

  3. Heat up whole wheat taco tortillas on both sides on stove at low heat in a pan

  4. Add Mexican style cheese, mango salsa, pinto beans, baked salmon, sour cream, avocado, fresh cilantro, + squeeze lime over it

What You Need:

  • Salmon

  • Olive oil to your liking

  • 1/2 cup of minced garlic

  • 1/3 cup of honey

  • 1/3 cup of soy sauce

  • Chopped ginger to your liking

  • Cooked rice

  • Coconut milk

  • Steamed broccoli

What to Do:

  1. Mix olive oil, 1/2 cup of minced garlic, 1/3 cup of honey, 1/3 cup of soy sauce, + chopped ginger to create sauce

  2. Marinate raw salmon in sauce (I bake it right away, but you can marinate it for a few hours or so)

  3. Bake for 20 minutes at 400 degrees

  4. Pour coconut milk over cooked rice to your liking

  5. Serve on plate with baked honey salmon, coconut rice, + steamed broccoli

What You Need:

  • Salmon

  • Cream cheese

  • Spinach (frozen or fresh)

  • Minced garlic

  • Garlic powder

  • Ground pepper

  • 1/2 a chopped onion

  • Chives

  • Cooked Rice

  • Steamed broccoli

What to Do:

  1. Mix cream cheese, spinach, minced garlic, garlic powder, ground pepper, chopped onion, + chives

  2. Mix salmon with cream cheese mixture

  3. Bake salmon with olive oil for 20 minutes at 400 degrees

  4. Serve on plate with baked cream cheese salmon, rice, + steamed broccoli
